 dehydrate, steam cooking and dry. 

Retaining all dry matter:Protein,fat, carbohydrate, Vitamin, mineral and dietary fiber except the skin of purple sweet potato. 

After boiling it has the same colour and lustre,smell, taste, palate as fresh purple sweet potato steamed and mashed.
